Isomalt, also known as paraginitol, is a sugar substitute or sugar alcohol that is processed from beets.

 

1. Use as a sweetener: By far the most common use of iso-maltoketol is as an additive in "sugar-free" candies, cough drops and other commercial foods.

 

2. Used as a preservative.: The substance also extends shelf life and is sometimes used in products such as breakfast cereals, crackers, baked bread and muffins.

 

3. Aesthetic purposes: Many cooks and professional food decorators also beautify food with iso-maltoketol.
